Brownies, Gluten Free {recipe}

Preheat oven to 350 degrees

  • 1 package Chocolate pudding (make first according to directions on package)
  • 1 cup butter
  • ¾ cup cocoa powder
  • 2 ¼ cup sugar

Cream well.  Add 5 eggs and cream well.

Add 2 cups flour,  1 tsp xanthan gum, 1 tsp vanilla, 1 tsp salt
Add all but 1 cup of pudding. (the more pudding the more moist and if you use it all it will never seem done, when cooking.)
1 cup nuts (optional)
Beat until very creamy.  (scrape sides and bottom well.)
In a Separate bowl make a small package of pudding.  Follow directions on box.  Let it sit for a few minutes so it firms up (I don’t put it in the fridge at all.)
Add to the brownie mixture and mix it in. For thick brownies put in a 9×13 pan for pan brownies put in a large flat baking (or bar) pan.  Bake for 25 -30 minutes (9×13 pan may take longer)
