Rad Lunch Rollups {recipe}

Ingredients

  • Green or red leaf lettuce
  • GF lunch meat
  • sliced or shredded cheese
  • mayo, mustard or salad dressing

Instructions

  • Wash and dry 1 or 2 leaves of lettuce and lay flat on the counter. Spread mayo, mustard or salad dressing in a light layer on the top of the leaf. Sprinkle with cheese or cheese slices. Top with a slice or 2 of lunchmeat. Beginning at 1 of the ends of the leaf (top or bottoM), roll it up until you get to the opposite side.

Notes

Rather than putting mayo, mustard, or salad dressing on the inside of the leaf, you can dip the roll up into your favorite GF salad dressing.
